The Vegan Project

About a month ago, my parents and I saw the movie “Forks Over Knives”. It promotes maintaining a plant based diet and scientifically explains all of the benefits associated with eliminating meat and dairy. I keep hearing people compare it to “Food Inc,” but instead of focusing on the food industry as “Food Inc” does, it instead focuses on the health aspect of a significant diet change. Of course, both are important.

After being presented with such persuasive reasoning, my dad and I decided to try their proposed 28 day trial of not only being vegan, but also minimizing added sugars, oils, preservatives, etc…We had our blood checked beforehand, and we’ll have it checked again after, to see if there are changes in cholesterol, glucose, and triglycerides. Here I will be blogging about our journey, good recipes, and any significant changes we find along the way.
