The Vegan Project

In December, the prime time for unbridled gluttony, my parents and I happened upon the documentary  “Forks Over Knives”. It promotes maintaining a plant based diet, and scientifically explains all of the benefits associated with eliminating meat and dairy. It’s been compared to “Food Inc,” but instead of focusing on the food industry as “Food Inc” does, it instead focuses on the personal health gain of a significant diet change. Of course, both are important.

After being presented with such persuasive reasoning, my dad and I decided to try their proposed 28 day trial of not only being vegan, but also minimizing added sugars, oils, preservatives, etc…We had our blood checked beforehand, and we had it checked again after to see if there were changes in cholesterol, glucose, and triglycerides. Here I blogged  about our journey, good recipes, and any significant changes we find along the way (spoiler alert: there were many, and most of them happened on the toilet).
